2 Yummo Recipes

Yesterday Miss Kennedie & I did some baking & cooking together. I love that she can sit in her Bumbo chair and hang with me in the kitchen. I tried out 2 new recipes & both were fabulous & super easy! (Sorry no pictures.)

Strawberry Bread

Ingredients:
- 3 cups of flour (I used whole wheat)
-2 cups of sugar (I used Splenda)
- 1 tsp. of baking soda
-3 tsp. of cinnamon
- 2 (10 oz) pkg. of frozen strawberries (I used a little more)
- 4 eggs
- 1 1/4 cups of oil

Mix dry ingredients. Mix wet ingredients. Mix all together. Pour into 2 loaf pans (or I used my bunt pan) that have been greased & floured. Bake at 325 to 250 degrees for about one hour or until done.


Baked Ziti

Ingredients:
- 1 & 1/2 pounds of ground beef
- 1 box of penne pasta (I used whole wheat)
- 8 oz of sour cream (I used fat free)
- 8 oz of shredded mozzerella cheese
- grated parmesean (I used low fat)
- 2 jars of spagehtti sauce
- 6 slices of provolone cheese (I used reduced fat)

Cook pasta according to directions & drain.

Cook ground beef & drain off any fat. Add sauce to meat & simmer.

Layer in a lasagna pan:
- 1/2 pasta
-provolone
-sour cream
-1/2 sauce
- rest of pasta
-mozzerella
-rest of sauce
-sprinkle top with parmesean to your liking

Bake at 350 degrees for 30 minutes. This dish is SOOOOOO easy & so good! My friend Monica in Las Vegas made it for us after we had Kennedie.... Thanks for the recipe Monica!

Lunch With Friends


Today we met the Hadleys & the Kimberlins for lunch at On The Border in Plano since it was kinda in the middle for all of us. It was so nice to get to spend the day with friends. We are so blessed to be just a hop, skip, & jump away from people.

Side note, Kennedie has now slept 2 nights in a row without being swaddled. I cried the first night we didn't swaddle her..... it just made me sad because I felt that it marked her as not being a newborn anymore. Why do little things like swaddles get the tears flowing???

PS: Lantz is preaching tomorrow (super excited!). Say a prayer that the Lord will speak through him to deliver a message that is in according to HIS truth & a message that will draw us into a deeper relationship with our Savior.

Not much going on over at our house today. We are just chilling & enjoying the nice weather- it's so nice to have rain. Last night we enjoyed a wonderful evening with the O'Neals. They were kind enough to invite us over for dinner & we had a great time!

Kennedie= 3 Months



I honestly can't believe that my baby is 3 months old today. Why does time have to go by so fast. I don't think I've ever thought that time goes by so fast as I do now that I have a sweet little baby. It seems like every day I find myself with tears in my eyes looking at her & thinking about how big she has already gotten.

She is so much fun right now. She laughs & giggles & smiles so much now that it just makes my day. She is still trying to figure out how her hands work, and she almost can hold her head up by herself. For some reason she loves her fingers. Seriously. She will push her pacifier out of her mouth to chew on her fingers sometimes.... this is not a good thing because alot of times she will then gag herself and throw up. Yuck. She is also turned into quit the little drool monster. Sometimes her whole shirt will be wet from all her drool. Nice.

Kennedie has also figured out who her momma is..... ME! I love it. I love that sometimes she will just cry cause I'm not holding her & then when I pick her up she is okay, or when someone else is holding her & can't comfort her & I get her she is all better cause it's me. Oh, my heart just swells with love thinking of how lucky I am to be her mother! We are so blessed by Kennedie.

Below you'll find a few pictures from today.... 3 months. You'll see her in her beautiful pink lacy dress that her Cowboy & Momma D gave her along with her bow that her Momma D helped me make. (I LOVE this dress on K. I dress her in alot of bright, funky stuff- but this may be my all time favorite cause it's just so sweet looking on her.) You'll also see her 3 month present that Lantz and I got her. It is her very first Bible. It is hot pink with a flower imprint into the leather & her name pressed in silver letters on the front. She got to carry it to Bible school for the first time today. I love that she got to pat her own Bible during the "This is the Bible.... " song. You'll also see a great picture of Kennedie smiling up at her Daddy... priceless. I love how she smiles with her whole face.... it just lights up!




Dear God,
Thank you so much for picking me to be Kennedie's mother. I am so blessed by her & I love her so much. By you allowing me to raise her I can start to understand your great love for me..... how it is truly unfathomable in so many ways. Kennedie is precious & I praise your name for the gift of love that she has brought to our lives. Thank you again for our little girl. In Jesus Name, Amen.

Kennedie & Eli

Yesterday Lantz, Kennedie & I drove over to Dallas to hang out with John, Crysty, & Eli. We had a great time. We took the kids to Park mall for story time & then ate lunch there & got some yummy gelato (I wonder if we have any yummy gelato places here in McKinney?), & walked around with the kiddos. Of course I took some pictures of the event. Enjoy:

Tilapia Recipe & Baby K

Aren't you proud? Look at this two posts in one week!!! First off I'd like to share with you a new recipe that I tried out last night. It was SOOOOOO good. It is a Rachel Ray recipe- a pasta with a fish. She called to cook the two together- which is what I did, but in the future I'm going to cook seperately with different items. Notice that I said "in the future" , which means I will be cooking them both again. Loved them..... especially the fish!

I just copied & pasted the recipe:

Tilapia with Balsamic Browned Butter and Creamy Farfalle with Bacon, Tomato and Peas

Ingredients:

Salt

1 pound farfalle, bow ties

3 tablespoons extra-virgin olive oil, divided

5 slices center cut bacon, chopped

1 medium onion, chopped

2 to 3 grated garlic cloves

1 bay leaf

12 white mushrooms, thinly sliced

1 can San Marzano tomatoes

4 (6 to 8-ounce) tilapia fillets

Salt and freshly ground black pepper

1/2 cup all-purpose flour

1 (10-ounce) box frozen peas

1/4 cup mascarpone cheese

3 tablespoons butter

1/4 cup balsamic vinegar

1/2 cup basil leaves, shredded or torn

Directions

Heat a pot of water to a boil, salt the water and cook pasta to al dente.

Heat a deep large skillet with 1 tablespoon extra-virgin olive oil over medium-high heat. Add bacon and crisp 3 to 4 minutes. Add onions, garlic, bay leaf and mushrooms, season with salt and pepper and cook until tender but not browned, 5 minutes. Add tomatoes, crush them up with a wooden spoon and simmer 15 minutes on low heat.

Season the fish with salt and pepper. Dust fish with flour and shake off excess.

Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium high heat. Cook fish 4 minutes on each side.

While fish cooks, stir peas into sauce, return to bubble and stir in mascarpone cheese. Adjust seasoning.

Remove fish from skillet to a platter and cover loosely with foil to keep warm. Reduce heat to medium and add butter to pan. Brown butter, 2 to 3 minutes, stir in balsamic and simmer 1 to 2 minutes to reduce by half. Pour the brown butter and vinegar over fish.

Drain pasta, toss with sauce and wilt basil into pasta.

Serve fish with pasta alongside.

Lantz & I had a great time on Tuesday night with the Hannahs. It was so nice of them to invite us over, & we really enjoyed catching up with them. (For those of you who don't know, we originally met Jim & Donna while we were in Vegas. Jim was one of the elders when Lantz was first hired. They moved to McKinney a few years ago.) We look forward to spending lots more time with them. It's neat how the Lord sometimes brings you back together with other people. We will get to spend time with some more of our Vegas friends on Saturday who moved to the area a few years ago also, Craig & Eunice!

Finally- pictures of Kennedie. Lantz read to her the sweetest book called The Tickle Monsterthat our good friends Daniel & Natalie got for Kennedie. She wasn't so sure about all of it, but it was so sweet to watch Lantz with K. Also, you'll see a picture of Kennedie in her blue dress. Well that is actually another one of my old dresses from when I was a baby--- she wore it to church last night & of course looked adorable & got lots of compliments. Of course, momma had to have a picture with her!

I'm Back!

Okay... Here I am! Hopefully back to stay. Sorry yall. I promise this post will be filled with tons of pictures!

WARNING: Long post, but lots of pictures!

Let's start from Vegas & move forward.

First of all let me say a HUGE "thank you" to all our Vegas friends who came out to help us pack up. We literally decided on a Thursday that we'd move on Saturday (2 days later), and it actually happened. Needless to say that would not have happened without some amazing friends helping us out!

While packing up our sweet friends Brittany & Brian stopped by with their little cutie Conner. Conner was actually born on Kennedie's due date & Kennedie was born on Conner's due date. Brittany and I delivered at the same hospital & were both there at the same time. Obviously she & Conner will always hold a special place in my heart. So we had to snap a picture of Conner & Kennedie before we headed out of town. Here are the two saying goodbye. (PS notice that Kennedie is wearing her Texas onesie in honor of moving back home.):


Lantz's sister Kristal flew out on Saturday to help us drive home to Texas. I can't tell you how much I enjoyed our trip home. Kennedie was FABULOUS in the car! She is an impressive little baby. I don't think Kristal & I heard a peep from her the whole way back. It was so nice of Kristal to ride with me while Lantz drove the Penske truck. Kristal & I really had a great time riding together, & I feel that we became even closer than we were before the trip. Have I mentioned how great my sister-in-law is? She is awesome. I'm so glad she is my SIL, but more than that I'm glad we are friends.

Once we arrived in McKinney it was time to hit the ground running with trying to find a place to live. Lantz and I lived with my parents while we looked for a week. The Lord quickly provided the perfect place for us to rent. I am loving our new rental home! Who could have guessed that you could love a rental house so much... great neighborhood, close to all necessary places, amazing neighbors (3 ministers on our street & one priest!), and cute clean home with brand new carpet & fresh paint! While living with my parents for that week we visited a few congregations including my mom's church where Kennedie went to Bible class for the first time. It was very special because Baba happened to be her first Bible school teacher. Here she is in her cradle roll class:


She has not missed Bible school yet. She is in her own class every Sunday and Wednesday. Everyone says that Kennedie does such a great job in Bible class.... that she stays awake & is so alert & really does listen & watch everything that goes on. Precious! I love that my little girl is being taught about God & Jesus & creation & how much she is loved!

Next a HUGE "thank you" goes out to all our new friends here in McKinney who helped us move into our rent house. You guys are so cool! I'm glad that we didn't have to unpack the truck all by ourself. It was all unloaded in about an hour and a half! Crazy. While unpacking our super good friends John & Crysty came by with their sweet little boy Eli. Eli is only 10 days older than Miss K, & I know that they are going to be great friends. I'm so glad that we are so close to this family. I'm really looking forward to lots of play dates for K & Eli. In the pictures below you'll see me holding Eli for the first time & Crysty holding Kennedie, and then the sweetest pictures of E & K hanging out & napping together.... ADORABLE!!!!



Lantz & I also had a really big night somewhere mixed into the last month. We left Kennedie for the first time. Lantz & I went to a Rangers game with Heather & Ellis. Ellis is a big Angels fan & so the Rangers were playing them & they drove in from Arkansas to go to the game. We decided to go along. It was sad to leave Kennedie for the first time, but it was fun to go to the game. Of course the Rangers won & so we had a good time giving Ellis a hard time. And of course we had to document the moment. There is a picture of Kennedie with her babysitter- her Momma D, a picture of Lantz, Kennedie, & I saying goodbye for a few hours, one of Lantz & I with Heather & Ellis, and then Aunt Feather wanted a picture with her & K:





About a week after moving into our rent house we went to Galveston with our upcoming seniors. We had a great trip. I must say that these young people really impressed me & I look forward to a great year with some outstanding leadership on their behalf. Here are just a few pictures. I'm going to post the rest to Facebook eventually. Kennedie laying in the shade on the beach (had to document her first trip to the beach), some of the seniors playing at the beach, and then a group shot of the kids plus Shea (parent) & Lantz.... so pretty much the "kids."


When we got home from Galveston our air conditioner broke, so we stayed at my parents house for a week and a half. After staying one night in my house again Mom & I went to Arkansas to visit Heather before school started & her roommate moved in. We had a great girls weekend full of Phase 10, laying out by the pool, eating out, cooking, talking, laughing, getting our hair done (by Heather.... mine looks great! If you are in Searcy & need a hair stylist call Heather at Salon Bliss), and loving on Kennedie. Aunt Feather also painted Kennedie's toe nails for the first time. They are so cute! See photo below.

While we were in Arkansas Lantz went to the lake with a sweet family from church. They had a blast, but sadly Lantz lost his wedding ring on the trip. It is on the bottom of the lake- probably by my dad's ring. He lost his in the same lake a few years after he & mom married. Crazy.

Yesterday I had to take Kennedie to the doctor. I do not have a spit up baby, and yesterday from 8:00 in the morning until 9:00am she vomited 3 times all over me, herself, the carpet, her bed, etc. It was so gross-- I'm not going to lie. I had to change twice. When I say it was everywhere on me - it was everywhere- on my shirt, my bra, my shorts, my panties, my arms, my legs..... gross! Apparently she just had a little bug. After I brought her to the doctor she was fine. She just had to have some pedialite before she ate, and I could only feed her just a little bit every 30 minutes. By the end of the day she was back to normal.

We love being in people's homes. So far we've had the opportunity to eat dinner at Bryan & Heather Jones' house & James & Becky Norred's house. Tonight we are excited to go to Jim & Donna Hannah's house for dinner. It will be neat to reconnect with Jim & Donna since we originally knew them in Vegas. They moved to McKinney a few years ago & worship at High Pointe.... so cool how the Lord brings people back together.

Now for an array of pictures of Kennedie. I know.... it's what you have been waiting for. Just so you know when you see the picture of Kennedie in a red dress-- that is a very special picture. That dress was mine when I was little & I have a picture made in it that is almost the same. I'm going to see if I can track down a photo of me in it & then post it up for comparisons. Okay... I think that pretty much catches you up on my life. Now to catch up on your lives. Over the next few days I plan on sitting down & reading your blogs. My goal is to hopefully blog again in a few days. Hopefully I can keep up with blogging once every other day or so now that life is somewhat back to "normal" or a new "normal."
