3 Cheese Chicken Penne

This one was super yummy!

  • 2 boneless skinless chicken beasts
  • Italian salad dressing
  • penne pasta
  • jar of Alfedo sauce
  • bag of shredded Italian cheeses
  • 4 tomatoes
  • 6-8 basil leaves
  • 2-3 cloves of garlic
  • 6 tablespoons extra virgin olive oil


MEAT: First thing you want to do is marinate the chicken in the Italian dressing for at least 30 minutes in the refrigerator. Then grill the meat and chop it into bite sized pieces.

BRUCHETTA: Chop tomatoes, garlic, and basil. Add to a bowl of olive oil. Set aside. Picture below of bruchetta:

PASTA: Cook according to directions. Then cover the pasta with the alfredo sauce. Warm.

ALL TOGETHER: Add pasta to the serving bowls. Sprinkle cheese to the top. Spoon bruchetta over the pasta. Add chicken to the top. (Put in microwave for 1-2 minutes to warm if you desire the cheese to melt.)

Pretty simple and yummy!
